Kale Caesar 

  • Ingredients 

    • Lacinato kale (wash and massage w/ salt until soft) 

    • Parmesan - shaved 

    • Golden raisins 

    • Honey balsamic chicken 

    • Sourdough croutons 

      • Sourdough bread 

      • Olive oil 

      • Salt 

      • Pepper 

      • Red peppers flakes 

      • Garlic powder 

  • Honey balsamic chicken 

    • Organic chicken breast 

    • 1 tsp olive oil 

    • ½ tsp salt 

    • ¼ tsp black pepper, ground 

    • ½ tsp paprika 

    • ¾ tsp onion powder 

    • 1 tbsp honey 

    • 1 tbsp balsamic vinegar 

    • 1 tbsp ketchup, organic 

    • 1 tsp garlic, minced 

1. Place all ingredients in a ziplock bag. Marinate for a minimum 30 min. 

2. Grill chicken, ~3-4 min on each side. 

  • Caesar dressing 

    • 2 cloves garlic 

    • 2 tsp anchovy paste 

    • 2 tsp dijon mustard 

    • 4 tsp worcestershire sauce 

    • 1 tsp black pepper, ground 

    • 2 tbsp olive oil 

    • 3 tsp red wine vinegar 

    • ⅔ cup greek or plain whole fat yogurt 


Strawberry Pecan 

  • Ingredients 

    • Mixed greens 

    • Strawberries, sliced 

    • Red onion, diced 

    • Goat cheese, crumbled 

    • Raisins 

    • Honey-roasted pecans 

      • Pecans, tossed in honey, bake at 400 for 4-5 min. 

    • Balsamic vinegar + evoo 

Robin’s Salad 

  • Ingredients 

    • Mixed greens 

    • Baked chicken 

    • Green beans, steamed

    • Avocado, sliced 

    • Sharp white cheddar cheese, diced 

    • Apples, diced 

    • Peanuts  

    • Balsamic vinegar + evoo 

Spinach-cranberry  

  • Ingredients 

    • Spinach 

    • Cranberries, dried 

    • Goat cheese, crumbled 

    • Strawberries, sliced 

    • Chicken, chopped 

    • Pecans 

    • Balsamic vinegar + evoo 

Southwest 

  • Ingredients 

    • Mixed greens 

    • Romaine, chopped 

    • Lacinato kale, chopped 

    • Corn, cooked & cooled 

    • Feta, crumbled 

    • Red bell peppers, diced

    • Red onion, diced 

    • Black beans, drained & washed  

    • Cilantro lime vinaigrette 

  • Cilantro lime vinaigrette 

    • 3 tbsp fresh lime juice 

    • 1/4 cup olive oil 

    • 1 tbsp white wine vinegar 

    • 2 tsp honey 

    • 1/1 tsp sea salt 

    • ⅛ tsp black pepper

    • 2 tbsp fresh chopped cilantro 

  • Roasted chickpeas 

    • 1 can chickpeas, washed & drain 

    • 1 tbsp avocado oil 

    • ¼ tsp ground cumin 

    • ¼ tsp paprika 

    • ⅛ tsp ground turmeric 

    • ⅛ tsp cayenne pepper 

    • Preheat oven to 400, bake for 20-25 min until crispy 

Broccoli-Apple 

  • Ingredients 

    • Broccoli, sliced 

    • Cashews 

    • Cranberries 

    • Apple, diced 

    • Celery, chopped

    • Balsamic vinegar + evoo

Taco Salad 

  • Ingredients 

    • Romaine 

    • Salsa, mild 

    • Avocado, diced 

    • Taco meat, ground beef 

    • Bell peppers, diced 

    • Mexican cheese 

    • Red onion 

Seedy Salad 

  • Ingredients 

    • Mixed greens 

    • Romaine, chopped 

    • Goat cheese, crumbled 

    • Apples, diced 

    • Pumpkin seeds

    • Sunflower seeds 

    • Cranberries 

    • Honey-roasted pecans

    • Baked chicken (evoo, salt, pepper) 

    • Balsamic vinegar + evoo

Avo-Steak

  • Mixed greens 

  • Steak 

  • Cucumbers, diced 

  • Unexpected cheddar, shredded

  • Balsamic vinegar + evoo

  • Homemade guac 

    • Avos, fresh lime juice, diced tomatoes, diced red onion, salt 

Greek Salad 

  • Ingredients 

    • Mixed greens 

    • Avocado, sliced 

    • Roasted chickpeas 

    • Feta, crumbled 

    • Red onion, diced 

    • Cucumbers, chopped 

    • Grilled chicken w/ greek marinade 

    • Balsamic vinegar + evoo

  • Roasted chickpeas 

    • 1 can chickpeas, washed & drain 

    • 1 tbsp avocado oil 

    • ¼ tsp ground cumin 

    • ¼ tsp paprika 

    • ⅛ tsp ground turmeric 

    • ⅛ tsp cayenne pepper 

    • Preheat oven to 400, bake for 20-25 min until crispy 

  • Greek marinade 

    • Boneless skinless chicken breast 

    • 2 tbsp olive oil 

    • ½ lemon, juiced 

    • 2 tsp garlic, minced 

    • 1 tbsp oregano 

    • 1 tsp salt 

    • ½ tsp pepper 

    • 1 tsp basil 

    • ¼ tsp thyme 

    • Marinate for min 30 min

    • Prep grill with oil, grill for 15-20. 

Arugula-Plum 

  • Ingredients 

    • Arugula

    • Plums, sliced 

    • Parmesan, shaved 

    • Red onions, thinly sliced  marinated in champagne vinegar + salt & pepper 

    • Almonds, sliced 

    • Lemon-pepper chicken 

  • Lemon-pepper chicken 

    • Organic chicken breasts 

    • Lemon-pepper seasoning 

    • Bake at 350 for 35 min
